Chicken Enchiladas

  • Ingredients: 8 corn tortillas, 2 cups shredded chicken, 1 cup salsa roja, 1 cup shredded cheddar, 1/4 cup sour cream.
  • Steps:
    1. Preheat oven to 375°F. Spread 1/4 cup salsa roja in a baking dish.
    2. Fill tortillas with chicken, roll, and place seam-side down in dish.
    3. Top with remaining salsa and cheese. Bake 15–20 minutes.
    4. Drizzle with sour cream.
  • Serve: Hot.
