Chicken Enchiladas
- Ingredients: 8 corn tortillas, 2 cups shredded chicken, 1 cup salsa roja, 1 cup shredded cheddar, 1/4 cup sour cream.
- Steps:
- Preheat oven to 375°F. Spread 1/4 cup salsa roja in a baking dish.
- Fill tortillas with chicken, roll, and place seam-side down in dish.
- Top with remaining salsa and cheese. Bake 15–20 minutes.
- Drizzle with sour cream.
- Serve: Hot.
